Borage originates from the Mediterranean Area and it has a fresh and slightly cucumber-like flavour. It's well-known and used in herbal medicin for it's fortifying and diuretic properties. This herb is also used in dishes. The attractive blue flowers are used for decoration. The grey-green, hairy leaves are finely sliced and used in salads and with fish. It can also be added to soups and sauces at the last moment to prevent flavour loss. From the end of march You can sow outdoors in pots or straight in the soil on a sunny plot with some free drainage. Sow thinly and cover the seeds with some soil. Keep moist and weedfree.
Thin the seedlings, when they're large enough to handle, to 20 cm and protect them against nightfrosts. This decorative plant is very attractive to bees. It can reseed itself.
